Before start upgrade to hibernate 5.6.x if not yet done. There is still a problem with the TaxonGraphHibernateListener(Test) or TaxonGraph(Test), see related issues #7861, #7648 (and related tickets).

Also we should try to work on all deprecated hibernate methods and remove them before upgrading to 6+.

While working on the migration of "createCriteria()" calls, I stumpled across the JPA MetamodelGenerator (https://docs.jboss.org/hibernate/orm/5.0/topical/html/metamodelgen/MetamodelGenerator.html), we should analyze whether this is useful or more not needed complexity. Maybe there are synergies with the ModelCache.

Also remove all "javassist" occurrence in dependencies and code as javassist is removed as dependency starting with 5.6 or 5.
